Quality, territory and food safety: after Milan and Turin, Chef Cristina Cerbi hosts the “work in progress” of EVO
The PDO Riviera Ligure Extra-Virgin Olive Oil Protection Consortium targets the Horeca professionals of the province of Parma in its new valorisation project dedicated to one of the symbols of Made in Italy food excellence: PDO Riviera Ligure extra virgin olive oil. As consumers are becoming more and more interested in knowing the origin of products and raw materials, the restaurant scene of the province of Parma focuses on one of the staple ingredients of the Mediterranean diet.
Thus, it comes as no coincidence that the PDO Riviera Ligure Extra-Virgin Olive Oil Protection Consortium selected the Parma area to communicate the excellence of its productions through the “Qualità Certificata nell’Alta Cucina” (i.e. Certified quality in Haute Cuisine) campaign, which targets high-end restaurants and quality small scale retailers
The project aims at satisfying the quest for quality, excellence and distinction expressed by consumers: to this end, the Consortium supports relationships and exchanges between PDO producers and the Horeca industry.
Each event features technical tastings addressed to 30 professionals from different sectors – quality gastronomy, high end restaurants and retailers – selected by the Qualivita Foundation, which has been operating for more than 15 years at national level in the promotion and valorisation of PDO quality agri-food products.
Milan-based Chef Tano Simonato (executive of Tanopassamilolio), chose PDO Riviera Ligure EVO as the protagonist of the special menu he designed for the event, which took place in Fidenza – a welcoming town a few kilometres from Parma (2020 Capital of Culture) – at the Osteria di Fornio, run by Chef Cristina Cerbi and husband Luca Caraffini. The Osteria boasts a reputation as one of the best restaurants in the area, appreciated by Italian and international specialist presses for its quest for quality and sensibleness.
During the Fidenza, Milan and Turin appointments, it was up to PDO Riviera Ligure EVO to narrate how PDO certification and quality controls guarantee contents and origin of a healthy and safe oil – not to forget about the economic and social sustainability of the ancient Ligurian oil supply chain, historically represented by iconic taggiasca olive. Therefore, PDO EVO stands (once more) as both a key asset for the territory and the one and only condiment for Italian food excellence and its recipes, a treasure appreciated all over the world.
